Shakshouka

    Sauté Aromatics: Heat 2 tbsp olive oil in a wide skillet over medium heat. Add onions and peppers, sautéing for 5-7 minutes until softened.

    Add Spices: Stir in garlic, cumin, paprika, and chili flakes. Cook for 1 minute until highly fragrant.

    Simmer Sauce: Pour in the diced tomatoes. Bring to a gentle simmer and cook for 10-15 minutes until the sauce thickens and the tomatoes break down.

    Poach Eggs: Create small wells in the sauce using a spoon. Carefully crack one egg into each well.

    Cover and Cook: Cover the skillet and let simmer on low heat for 5-8 minutes until the egg whites are fully set but yolks remain slightly runny.
