Boil the instant ramen noodles in water for 3 minutes until tender. Drain them thoroughly.

Transfer the hot noodles to a bowl and toss them with half of the included seasoning packet, the soy sauce, and the sesame oil. Let them cool slightly.

Fill a wide, shallow dish with warm water. Quickly submerge one rice paper wrapper in the water for 10-15 seconds until it just begins to soften.

Lay the softened wrapper flat on a clean, damp cutting board. Place a small handful (about 2 tablespoons) of the seasoned noodles in the center of the wrapper.

Fold the left and right sides of the wrapper over the noodles, then tightly roll it up from the bottom to the top, like a burrito.

Repeat with the remaining wrappers and noodles. Serve fresh with sweet chili sauce or extra soy sauce for dipping.
