Sardine Pasta

Bring a large pot of generously salted water to a boil. Add the pasta and cook according to package directions until al dente.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Drain the sardines (discarding the tin oil) and add them to the skillet. Use a wooden spoon to break them apart into small pieces.

Stir in the garlic powder (or fresh garlic) and red pepper flakes, cooking for 2-3 minutes until fragrant.

Before draining the pasta, carefully scoop out 1/4 cup of the starchy pasta water. Drain the pasta and add it directly to the skillet.

Pour the reserved pasta water into the skillet. Toss everything continuously over low heat for 1-2 minutes until a glossy sauce coats the pasta. Serve hot.
