Tuna and Bean Salad

    Drain the tuna well and transfer it to a large mixing bowl. Flake it into bite-sized pieces with a fork.

    Open the can of white beans, pour them into a colander, and rinse thoroughly under cold water. Shake off the excess water.

    Add the rinsed beans to the bowl with the tuna.

    In a small cup, whisk together the extra virgin olive oil, fresh lemon juice, salt, and pepper to create a quick dressing.

    Pour the dressing over the tuna and beans. Toss gently with a large spoon so you don't mash the beans.

    Garnish with chopped fresh parsley if desired and serve immediately, or chill for 30 minutes to enhance the flavors.
