Tequeños

Venezuela's favorite party food, crispy fried dough sticks wrapped around a gooey core of melted white cheese.

Instructions

    In a bowl, combine the flour and salt, then cut in the softened butter and beat in the egg, adding ice water a tablespoon at a time until a smooth, firm dough forms.

    Knead the dough briefly, then wrap and rest it for 15 minutes to relax the gluten so it rolls out easily.

    Roll the dough out on a floured surface to about 1/8-inch thick and cut it into long strips roughly 3/4-inch wide.

    Wrap each strip in a slight overlapping spiral around a cheese stick, fully sealing both ends so the cheese cannot leak during frying.

    Heat the vegetable oil to 350°F and fry the tequeños in batches for 3 to 4 minutes, turning, until evenly golden and crisp.

    Drain on paper towels and serve hot with a guasacaca or garlic dipping sauce.
