Instructions

    Melt the margarine in a large skillet over medium heat. Add the chopped onion and green pepper and cook until softened, about 4-5 minutes.

    Add the sliced squash along with the salt, pepper, thyme, and lemon juice. Stir to combine well.

    Cover and cook over moderately low heat for 10-15 minutes, stirring once or twice, until the squash is crisp-tender. Serve warm.
