Peppers
Ranges from sweet and grassy in bell peppers to sharp, fruity heat in chilies.
Lens analyzedPeppers cover a wide range of fruits from the capsicum family, from sweet bell peppers to fiery chilies, used raw for crunch, roasted for sweetness, or dried and ground for heat. The same plant family produces wildly different flavors and heat levels depending on variety and ripeness.
Where it comes from
Peppers originated in Central and South America and spread worldwide after European contact in the 15th and 16th centuries, quickly embedding themselves in cuisines from Hungarian paprika to Sichuan chili oil to Filipino sinigang. Few ingredients traveled and adapted into as many different culinary traditions this fast.
Buying it
Fresh peppers should feel firm and heavy for their size, with smooth, glossy skin and no soft spots or wrinkling. Dried peppers should be pliable rather than brittle, since overly dry pods have lost much of their aroma.
Storing it
Fresh peppers keep for one to two weeks in the fridge's crisper drawer. Dried or pickled peppers are far more shelf-stable and can sit sealed in the pantry for many months without losing much punch.
Keeps about 1 year in the pantry.
