Chicken Adobo

A classic Filipino dish of chicken marinated and simmered in soy sauce, vinegar, and garlic.

Instructions

    Marinate: Combine the chicken pieces, soy sauce, and crushed garlic in a large bowl. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.

    Sear: Heat the cooking oil in a wide pan or wok over medium-high heat. Remove the chicken from the marinade (reserve the liquid) and pan-fry for 3-5 minutes per side until lightly browned.

    Simmer: Pour the reserved marinade into the pan along with the vinegar, bay leaves, and peppercorns. Bring to a boil, then immediately lower the heat to a gentle simmer. Do not stir the vinegar for the first 5 minutes to cook off the raw acidic taste.

    Tenderize: Cover the pan and simmer for 25-30 minutes, turning the chicken occasionally, until the meat is very tender and cooked through.

    Reduce: Uncover and increase the heat to medium. Let the sauce reduce and thicken slightly for another 5-10 minutes, basting the chicken with the glossy dark sauce. Serve hot over steamed rice.
