    Boil the new potatoes in salted water until fork-tender (about 15 minutes). Drain, let cool slightly, and halve them.

    Blanch the green beans in boiling water for 3 minutes until crisp-tender, then immediately plunge them into an ice-water bath to stop the cooking and preserve their bright green color.

    Prepare the hard-boiled eggs by boiling for 8-9 minutes, cooling in ice water, peeling, and quartering.

    If using fresh tuna, season it with salt and pepper and sear in a hot pan for 1-2 minutes per side, leaving the center rare. Slice thinly.

    Arrange the potatoes, green beans, tomatoes, olives, eggs, and tuna artistically over a bed of crisp lettuce on a large platter.

    Drizzle generously with a sharp vinaigrette made from olive oil, lemon juice, Dijon mustard, minced shallot, and herbs.
