    Bring the pork and chicken stock to a simmer in a saucepan, then stir in soy sauce, mirin, sake, rice vinegar, and sugar.

    Add the sliced chashu and menma to the broth and simmer gently for 8 minutes so the dipping soup becomes concentrated and glossy.

    Boil the fresh ramen noodles in plenty of water according to the package timing, usually 3 to 5 minutes for thick noodles.

    Drain the noodles, rinse firmly under cold running water to remove surface starch, then drain very well.

    Divide the cold noodles among bowls and top with nori, soft-boiled eggs, and scallions.

    Ladle the hot concentrated soup with chashu and menma into separate bowls and serve for dipping the noodles.
