    Rinse the cut potatoes in cold water to remove excess starch, then drain well.

    Heat the neutral oil in a wide pan over medium heat. Add the potatoes and cook for 4-5 minutes, stirring occasionally, until the edges turn slightly translucent.

    Add the onion, soy sauce, sugar, rice syrup, minced garlic, and water. Stir to coat the potatoes.

    Bring to a boil, then reduce to medium-low. Simmer uncovered for 18-22 minutes, gently turning the potatoes now and then, until tender and the sauce is reduced to a glossy coating.

    Turn off the heat and stir in the sesame oil. Sprinkle with toasted sesame seeds before serving.
