Scrape the beef from the short rib bones, trim excess sinew, and finely mince the meat with a knife until sticky and cohesive.

Mix the soy sauce, grated pear, onion, scallions, garlic, sugar, honey, sesame oil, sesame seeds, rice wine, and black pepper in a bowl.

Add the minced beef and knead firmly for 3 to 4 minutes until the mixture becomes tacky; cover and marinate for 30 minutes.

Divide the seasoned beef into 8 portions and press each portion into an oval patty around a reserved rib bone or into a thick oval patty if not using bones.

Heat a grill pan or heavy skillet over medium heat and lightly oil it; cook the patties for 4 to 5 minutes per side, brushing with any remaining marinade, until browned and cooked through.

Sprinkle with chopped pine nuts and serve hot with rice and banchan.
