Lemon Herb Baked Cod with Garlic Zucchini Noodles

A very light, low-calorie, high-protein meal bursting with bright citrus and fresh herb flavors.

    Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.

    Pat the cod fillets dry with paper towels. Place them in the baking dish and season generously with salt, pepper, and the fresh chopped herbs.

    Drizzle 1 tbsp of olive oil and the juice of 1 lemon over the fillets. Top each fillet with 1-2 thin slices of fresh lemon.

    Bake the cod for 12-15 minutes, or until the fish is opaque, flaky, and reaches an internal temperature of 145°F (63°C).

    While the fish is baking, heat 1 tbsp of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

    Add the spiralized zucchini noodles (zoodles) to the skillet. Toss gently for 2-3 minutes until just warmed through but still al dente. Divide the zoodles and top with a baked cod fillet.
