Pesto Tuna Pasta

Instructions

    Bring a medium pot of generously salted water to a boil. Add the dry pasta and cook for 9-11 minutes until al dente.

    Before draining, reserve about 2 tablespoons of the starchy pasta cooking water in a small cup. Drain the pasta well.

    Return the hot pasta to the warm pot (off the heat).

    Flake the drained tuna into the pot, then add the basil pesto.

    Toss everything together vigorously. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it up.

    Serve immediately in bowls, topped with a dusting of grated Parmesan cheese if desired.
