Clams

Briny, sweet, and deeply oceanic with a tender, slightly chewy texture; the liquor (natural juice) inside is full of concentrated sea flavor and is itself a prized cooking ingredient.

Lens analyzed

Clams are bivalve mollusks — shellfish with two hinged shells — found in both saltwater and freshwater environments around the world. Their briny, oceanic flavor and tender meat make them central to iconic dishes like New England clam chowder, Italian linguine alle vongole, and the classic New England clambake. They are also eaten steamed, grilled, raw on the half shell, and stuffed.

Where it comes from

Pulled from tidal flats and harbors by hand for millennia, clams connect a bowl of pasta or a pot of chowder to one of humanity's oldest food traditions — the original fast food of coastal peoples everywhere.

Varieties — Hard-shell clams (quahogs) come in sizes: littlenecks (smallest, best raw or quickly steamed), cherrystones (medium), and chowder clams (largest, best chopped for soups). Soft-shell clams (steamers) have a longer neck and thin shell. Manila clams are small, sweet, and popular in Asian cooking. Razor clams are long and mild.

Linguine alle vongole is one of the canonical dishes of Neapolitan coastal cooking. New England clam chowder is a regional identity food in Massachusetts. Korean haemul pajeon (seafood pancake) frequently features clams.

In a modern kitchen — Discard any clam that doesn't open after cooking — this is a reliable sign it was not alive when it went into the pot.

Buying it

Buy live clams that are tightly closed or close when tapped — open clams that don't respond are dead and should be discarded. They should smell fresh and oceanic, not ammonia-like. Keep refrigerated on ice and use within a day or two of purchase.

Storing it

Keep live clams in the fridge in a breathable container — a bowl covered with a damp cloth, not sealed in plastic — and use them within a day or two of purchase. Discard any that stay open and won't close when tapped, or smell strongly fishy.

Keeps about 2 days in the fridge.

Out of clams? Good swaps

  • mussels — Similar briny flavor and cooking method; slightly sweeter; work well in pasta and steamed preparations
  • canned clams (chopped) — Convenient pantry substitute in chowders and pasta — less textured but retain the flavor
