Caramel Rice Pudding

A slow-baked creamy rice pudding with a rich golden caramel crust and a hint of nutmeg.

Instructions

    Preheat the oven to 285°F (140°C) and butter a baking dish. Rinse the rice well under cold water and drain.

    In the baking dish, combine the rice, brown sugar, butter, milk, and nutmeg, stirring to mix.

    Bake in the slow oven for 2 to 2 1/2 hours, stirring every 30 minutes and adding a little more milk if the pudding looks dry, until the rice is tender and creamy.

    The pudding is ready when the milk has reduced to a rich caramel cream and a golden crust has formed on top.

    Serve hot or cold. This can also be baked in individual ramekins if preferred.
