Pat the chicken dry and loosen the skin slightly around the breast and thighs without tearing it.

Mix soy sauce, calamansi juice, fish sauce, brown sugar, minced garlic, chopped onion, bay leaves, black pepper, oil, and salt in a large bowl.

Rub the marinade all over the chicken, including under the skin and inside the cavity. Stuff the cavity with the bruised lemongrass.

Cover and marinate in the refrigerator for at least 4 hours, turning once halfway through.

Heat the oven to 190°C. Place the chicken breast-side up on a rack over a roasting pan and reserve the marinade.

Roast for 75 to 90 minutes, basting with the reserved marinade every 20 minutes, until the skin is deep golden and the thickest part of the thigh reaches 74°C.
- 7
Rest the chicken for 10 minutes before carving and serving.
