Beef Semur

Beef stew in sweet soy sauce.

Instructions

    Purée shallots, garlic, ginger, and candlenuts into a smooth paste.

    Heat oil in a heavy-bottomed pot and sauté the spice paste with cloves, cinnamon, and nutmeg until aromatic.

    Add the beef cubes and sear them over medium-high heat until browned on all sides.

    Pour in the sweet soy sauce, stir to coat the beef, and add enough water to just cover the meat.

    Bring to a boil, then lower the heat, cover, and simmer for 1 hour until the beef is mostly tender.

    Add the cubed potatoes and continue to simmer uncovered for another 30 minutes until the potatoes are cooked and the sauce has thickened.
