Bibim Naengmyeon (Spicy Cold Noodles)
A variation of Naengmyeon served with very little broth and mixed with a spicy, sweet gochujang-based sauce.

To make the spicy sauce, place the 1/4 Asian pear, onion, and garlic in a food processor and blend until smooth. Transfer to a bowl and whisk in the gochujang, gochugaru, soy sauce, vinegar, and sesame oil.

Boil the naengmyeon noodles for 1-3 minutes (depending on type), drain, and aggressively scrub them in ice-cold water until thoroughly chilled and chewy.

Squeeze as much water out of the noodles as possible. Place them in a large mixing bowl.

Pour the spicy fruit-based sauce over the noodles and toss thoroughly by hand (using a glove) until every strand is coated in the thick red sauce.

Divide the spicy noodles into serving bowls.

Garnish with a neat stack of julienned cucumber, julienned pear, and top with the half boiled egg. Serve with a small side cup of cold beef broth.
