Look for gochujang in a red tub or tube — CJ Haechandle and Sempio are the most widely available brands in North America. Choose a spice level that suits your household. Avoid products with lengthy ingredient lists of artificial thickeners and colorings — real gochujang should list rice or glutinous rice, gochugaru, soybean paste (meju), and salt. After opening, keep refrigerated and covered.

Keep refrigerated once opened, with the lid pressed flat against the paste to limit air exposure. Being fermented and salty, it keeps for a long time — slight darkening at the edges is normal.
