    Combine the chopped kimchi, kimchi brine, wheat flour, cold water, scallions, gochugaru, and sugar in a bowl; stir just until a loose batter forms.

    Heat 2 tablespoons of oil in a large skillet over medium-high heat until shimmering.

    Spread half the batter into a thin round pancake, pressing the kimchi evenly so the edges can crisp.

    Cook for 3 to 4 minutes until the bottom is deep golden, then flip and cook 3 minutes more, adding a little more oil around the edges if needed.

    Repeat with the remaining oil and batter, then cut the pancakes into wedges and serve hot.
