Season the pork strips with salt and black pepper and let stand for 10 minutes.

Mix 1 cup potato starch with enough water to cover, let it settle for 20 minutes, then pour off the clear water and combine the thick starch with the egg white.

Coat the pork evenly in the starch batter.

Heat vegetable oil to 170°C and fry the pork in batches for 3 to 4 minutes, until pale golden; drain briefly.

Raise the oil to 185°C and fry the pork again for 1 to 2 minutes, until crisp and golden.

In a saucepan, simmer water, sugar, rice vinegar, soy sauce, onion, carrot, and cucumber for 2 to 3 minutes, then stir in the starch slurry until glossy and thickened.

Serve the fried pork with the hot sweet-sour sauce poured over it or served on the side.
