Cooks prepare it by either cooking it very quickly over high heat (30–90 seconds for tender calamari rings) or braising it low-and-slow for 45 minutes or more until the tough proteins relax back into tenderness. The ink sac, tentacles, and body are all edible and used in different preparations.
