Remove the halloumi from its packaging and pat it completely dry with paper towels.

Cut the halloumi blocks into thick slices, about 1/3-inch to 1/2-inch thick.

Lightly brush both sides of each halloumi slice with a very thin coating of extra virgin olive oil.

Heat a grill pan or a non-stick skillet over medium-high heat until very hot.

Place the halloumi slices in the hot pan. Grill for 2-3 minutes per side without moving them, until a deep golden-brown crust forms with distinct grill marks.

Transfer immediately to a serving plate. Serve hot with a generous squeeze of fresh lemon juice, cracked black pepper, and scattered fresh mint leaves. (Halloumi must be eaten immediately while warm and soft; it becomes rubbery as it cools).
