Avocados have been cultivated in Mexico and Central America for at least 5,000 years, with wild ancestors stretching back even further. Spanish colonizers encountered them in the 16th century and introduced them to Europe and other continents, though widespread North American consumption only took off in the late 20th century. Today, Mexico, California, and Chile supply the bulk of what reaches North American tables, and Hass avocados have become one of the most consumed fresh fruits on the continent.

Varieties — Hass avocado (pebbly dark skin when ripe) dominates North American markets with its buttery texture and small pit. Florida avocados are larger, smoother-skinned, and less rich. Fuerte and Reed varieties appear at farmers markets — rounder and green even when ripe.

Guacamole is rooted in pre-Columbian Aztec cuisine; avocado also appears in Filipino dishes like dessert halaya and simple salads, and is used as a sweet fruit in parts of Brazil and Vietnam (with condensed milk and ice).

In a modern kitchen — To slow browning of cut avocado, press plastic wrap directly onto the flesh or brush with lime juice and store in the fridge. A ripe Hass avocado yields gently to thumb pressure at the stem end.

For immediate use, choose a Hass avocado with dark, almost black skin that yields gently when pressed near the stem. For use in a few days, buy firm, green Hass avocados and ripen at room temperature. Avoid any with sunken spots or a hollow sound when tapped.

Storing it

Ripen at room temperature until it yields slightly to gentle pressure, then refrigerate to slow further ripening. A very dark, mushy spot when cut open means it's overripe.
