Bhel Puri

A savory snack originating from India, made of puffed rice, vegetables and a tangy tamarind sauce.

Instructions

    Crisp the Puffed Rice: If the puffed rice feels slightly soft, dry roast it in a wide pan over low heat for 2 minutes until it becomes perfectly crisp. Let it cool.

    Prep the Veggies: Boil, peel, and dice the potato into tiny cubes. Finely chop the onions and tomatoes. Make sure to remove the wet seeds from the tomatoes to prevent the bhel from getting soggy.

    Mix the Dry Ingredients: In a very large mixing bowl, combine the crisped puffed rice, diced potatoes, onions, tomatoes, and 1/2 cup of the sev. Toss them together lightly.

    Spice it Up: Sprinkle 1 tsp chaat masala, 1/2 tsp roasted cumin powder, and a pinch of black salt over the dry mix.

    Add the Chutneys: Just before serving (this is crucial to maintain crunch), drizzle the sweet-and-sour tamarind chutney and the spicy green mint chutney over the mixture.

    Toss and Serve: Use two large spoons to vigorously toss everything together so the chutneys coat the puffed rice. Immediately transfer to serving bowls, top with the remaining sev, fresh cilantro, and a squeeze of lemon juice. Consume instantly.
