Spread the diced zucchini, bell peppers, and red onion on the baking sheet.

Roast the vegetables for 20-25 minutes, tossing halfway through, until they are deeply caramelized and tender.

Meanwhile, boil a pot of salted water and cook the rotini pasta according to package directions. Drain, returning the pasta to the warm pot.
