Boil the Sago: Bring 6 cups of water to a rolling boil in a pot. Pour in the sago pearls, stir, and lower the heat to a simmer. Cook for 15 minutes. Turn off the heat, cover the pot, and let it sit for another 15 minutes until the pearls are completely translucent. Drain and rinse under cold water.

Make the Syrup (Arnibal): In a small saucepan, combine the dark brown sugar and 1/2 cup of water. Heat over medium heat, stirring until the sugar completely dissolves. Let it simmer for 3-5 minutes until it thickens slightly into a syrup. Stir in the vanilla extract and remove from heat.

Warm the Tofu: The tofu needs to be warm, just like from a street vendor. You can steam the block of silken tofu for 5-10 minutes, or microwave it in a bowl for 2-3 minutes until heated through.

Assemble: Use a wide, flat spoon (or a shallow ladle) to carefully scoop thin, delicate layers of the warm silken tofu into a glass or cup.

Layer and Serve: Add a spoonful of the cooked sago pearls on top of the tofu, then generously drizzle the warm brown sugar syrup over everything. Stir slightly before eating while it's warm and comforting.
