    If using fresh potatoes, heat vegetable oil in a skillet over medium-high heat and fry the potatoes until golden and crispy. Drain excess oil, leaving about 1 tablespoon in the pan.

    In a medium bowl, vigorously whisk the eggs with the salt, black pepper, diced onions, diced tomatoes, and chopped cilantro.

    Arrange the cooked fries evenly in a single layer in the hot skillet over medium heat.

    Pour the beaten egg mixture evenly over the fries, ensuring the egg fills the gaps between the potatoes.

    Cook undisturbed for 3-4 minutes until the bottom is set and golden brown.

    Carefully flip the entire omelet using a large spatula or by sliding it onto a plate and inverting it back into the pan. Cook the other side for 2 minutes until fully set. Serve hot.
