    In a medium saucepan, bring 2 cups of water or low-sodium broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes until the liquid is absorbed and the quinoa "tails" pop.

    Heat a large non-stick skillet over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it apart with a wooden spoon until browned and no pink remains.

    Drain any excess fat from the skillet. Add the chopped red onion and diced bell peppers to the beef.

    Sprinkle the taco seasoning evenly over the mixture and stir well. Sauté for another 4-5 minutes until the peppers are tender-crisp and aromatic.
